Do you know parfait, an incredibly creamy, semi-frozen ice cream? For some reason, the word "complicated" always resonates with this dessert. It's not hard to make a heavenly vanilla parfait yourself. You only need four ingredients, 15 minutes - and a little patience afterward 😉.
Because, of course, freezing the homemade parfait already needs a few hours. Even if it is not hard anyway. But what is also the great thing about this dessert: It is just sooooo soft 🙂 ! A delicious parfait without ice crystals is no problem at all with my recipe.

The best: The whole thing works entirely without an ice cream maker. Without mixing or stirring for half an hour. So a bit like the simple 2-ingredient ice cream. Why does the parfait turn into a perfectly soft mass and not a hard block? Well, let's put it this way: parfait is delightfully luscious and made with only good ingredients 😉 . Specifically, there are fresh egg yolks, powdered sugar, bourbon vanilla, and whipped cream in it
So, all in all, vanilla parfait is not an easy thing to make. At least from a nutritional point of view - but you can neglect that for a delicious dessert, right 😉 ? Unlike regular ice cream, the mass freezes "standing", so without stirring.
How to make the Vanilla Parfait
First of all, lightly grease a small loaf pan (approx. 8-8.5 in / 20-22 cm) and line it with a cut-open freezer bag; alternatively, use cling film. Whip the cream until stiff and set aside. Beat the egg yolks with the sugar for a few minutes in a hot water bath with a hand mixer until light and fluffy. To do this, I heat water in a large pot and place my stainless steel mixing bowl in it. Be careful not to let the water boil. Otherwise, the mixture might curdle!
Now, remove the egg foam from the water bath. Stir in the vanilla pulp and fold in the whipped cream. Now beat the parfait mixture in a cold water bath (e.g. sink) or ice water for a few minutes until cold. Pour the parfait mixture into the prepared mold, smooth, and tap a few times. Freeze for at least 6 hours. Turn out, remove the freezer bag and allow parfait to thaw briefly - depending on chilling time - before cutting. Serve with berries, pistachios, or fruit sauce as desired.
Top Tip
To make the mass nevertheless airy and voluminous, a longer beating of the egg yolks in a hot water bath is necessary. After a few minutes, the yolks become incredibly light and creamy. Then only vanilla and whipped cream are added. Whipped egg whites or a fruity component are also added in some recipes. My basic parfait recipe, however, is quite basic. And yet soooo tempting!

Variations
You can fold in some fruit or jam to vary the vanilla parfait recipe. Of course, what always tastes delicious is vanilla parfait with raspberries - hot or cold. Since there are raw eggs in the dessert, it should not be stored for more than a week. But this warning is rather theoretical anyway. Because such a homemade parfait without an ice cream maker is too quickly nibbled 🙂 .
