Making vegan granola yourself isn't difficult at all. And if you're a huge fan of crunchy granola with extra-large pieces, like me, you can finally make one that meets your own high standards with this recipe 😉 it contains big, thick, crunchy granola chunks. And it's comparatively healthy - this recipe is vegan granola without white, refined sugar.
The significant advantage of making it yourself is that you know exactly what's in your granola and can also repeatedly vary the basic version. The fact that it's also comparatively healthy is just the highlight; it's more natural, lower in fat, and lower in sugar than the most store-bought varieties anyway.
Ingredients
My basic vegan granola recipe is based on oats, nuts, maple syrup and coconut oil. The nut varieties can be interchanged to suit your mood; the raisins are optional (but I'll never understand why some don't like them…). And if you don't like the relatively strong flavor of the maple syrup, use rice syrup or date sweetener. The perfect complement to my healthy cereal bars.
How to make Homemade Vegan Granola
First of all, mix the dry ingredients in a bowl. Preheat the oven to 350°F/175°C, and line a baking sheet with baking paper.
Now, melt the coconut oil in a small pan and add the coconut sugar until lightly browned. Then, remove from heat and stir in maple syrup. Pour the butter-sugar mixture over the dry ingredients, preferably spreading it well with your hands so that everything is coated with it. Lastly, add the raisins.
Spread granola on the baking sheet, forming "crunches" as you go. Bake for about 25-30 minutes while mixing the granola once or twice with a spatula. Towards the end of the baking time, make sure the granola is not browning too much. Allow to cool and store in an airtight storage jar or similar. Enjoy your homemade vegan granola!

- 80 grams (⅔ cup) almonds, chopped
- 80 grams (¾ cup) walnuts, chopped; alternatively hazelnuts
- 1 teaspoon cinnamon
- 1 pinch salt
- 50 grams (3 ⅔ tablespoons) coconut oil, alternatively butter (not vegan)
- 1 tablespoon coconut blossom sugar
- 70 grams (3 ½ tablespoons) maple syrup, or rice syrup
- 70 grams (½ cup) raisins
