Our new addition to the muffin recipes: extremely quickly made, super-healthy and just the right thing for all those who want to eat consciously. These sugar-free, vegan banana oatmeal muffins without sugar definitely do not only convince children!
Although I designed the recipe especially for the little ones, the result hits the spot even with grown-ups like me. 🙂

Taste and Occasion
The banana oatmeal muffins remind me of banana bread in taste. For me, the perfect vegan breakfast muffins. They are prepared absolutely fast - the dough is in the oven within 5 minutes. And great to take to kindergarten or to-go eating (similar to the healthy muesli bars).
Of course, you shouldn't necessarily compare them to double chocolate muffins from the coffee store. But for the fact that the banana oatmeal muffins do not contain egg, butter, oil, margarine, sugar, dried fruit or sugar substitute, they are really delicious!
And even suitable for allergy-plagued small children. Unfortunately, especially in the beginning, some have to do without eggs and dairy products.
As soon as you reach a baby food taster's age, you can give the sugar-free muffins to babies. But please do not eat them all at once when testing them…!
Ingredients
For the spelt banana muffins you need overripe fruit, preferably with brown spots. This makes the muffins pleasantly sweet and discreet. I like to add cinnamon and vanilla, as well as some lemon juice.
Since not only sugar but also fat is missing in any form, the consistency of the low-calorie muffins is slightly different from normal. They don't become fluffy or loose, but rather moist and juicy and firm, a bit like banana bread.
How to make the Vegan Banana Oatmeal Muffins
Preparing the healthy low-fat muffins is fairly easy. First, preheat your oven to 360°F / 180°C. While the oven is heats up, puree the very ripe bananas to purée. First, stir in the oat milk, then the remaining ingredients vigorously, but not too long.
In the last step, fill the dough into muffin cups. I recommend using silicone cups, as the muffins might stick together in paper cups. Bake the muffins for about 20 minutes.
Top Tip
The healthy muffins for babies and children can be wonderfully prepared and frozen, as well. This makes them a perfect breakfast dish.

Vegan Banana Oatmeal Muffins
Ingredients
- 3 bananas , large; very ripe; with skin approx. 450 grams
- 120 milliliters (½ cups) oat milk
- 120 grams (1 cups) spelt flour
- 80 grams (0.9 cups) oat flakes , tender
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 piece vanilla pulp , scraped out of a pod; optional
Instructions
- Preheat oven to 360°F / F180°C degrees. Puree the very ripe bananas to purée. First, stir in the oat milk, then the remaining ingredients vigorously, but not too long.
- Fill the dough into muffin cups (best made of silicone, in paper cups the muffins might stick together). Bake for about 20 minutes.

Of course you can refine the banana-oat muffins with various toppings - such as raisins, chopped dried apricots or dates, for adults also with chopped nuts or almonds. Or chocolate drops.
