Taste and Occasion
I developed the recipe as a birthday cake for our son's 1st birthday. And maybe there are parents among you who are also looking for some inspiration. Or adults who want a vegan banana cake recipe that is not entirely oversweetened. Voilá: This sugar-free, egg-free, butter-free cake tastes a little different than "regular" ones and doesn't look quite as pretty, but it's really moist, sweet, and tasty (if you don't mind a little soggy, compact and moist cake). Before anyone misunderstands me: I don't think you should ban sugar from toddlers. But as long as they don't know sugar, they don't miss anything. I think it's okay to be a little healthier. In any case, our son would have loved to dig into his first birthday cake. Literally 🙂 .
Ingredients
Children, of course, especially like the zebra cake pattern of the cake. The healthy banana cake becomes more festive if you spread it with frosting. Of course, not a frosting with 500 grams of powdered sugar, as that is often suggested in baking books… I easily mixed cream cheese with applesauce. If the cake should be vegan, you need, of course, a vegan cream cheese alternative.
By the way: The fact that the low-fat banana cake is rather coincidental - the ripe bananas and the applesauce have already brought a lot of moisture into the dough. Since young children are often allergy sufferers, a banana cake without egg, butter and milk is a basic recipe.
How to make the Vegan Banana Cake
First things first: Preheat the oven to 350°F/175°C. Grease a small springform pan (7-8 in/ 18-20 cm) and dust with flour or line with baking paper. Then, puree the very ripe bananas using a hand blender or mixer. Mix well with applesauce, milk, coconut oil and vanilla, so no pieces are left in the mixture.
Now, mix flour, baking powder, cinnamon and salt and gradually stir into the banana cream. Divide dough in half and stir additional cocoa and milk into one half. For the zebra pattern, put a few tablespoons of dough in the middle, put some dark dough on top of the light dough, then light dough again, and so on. The dough will run outward in the pan, creating the marble pattern. Bake cake for about 35 minutes, remove from pan and let cool.
For optional frosting, beat cream cheese with a hand mixer until smooth and add enough fruit puree until the cream is slightly sweet. Spread on top of the cake.
Top Tip
If you are not vegan, you can use regular cow's milk instead of vegetable milk such as oat milk, as well as butter instead of coconut oil, (but then a little more, about 30 grams).

Ingredients
For the cake
- 3 pieces bananas, about 400 grams with peel, very ripe!
- 150 grams (â…” cup) applesauce, without sugar, preferably homemade
- 100 milliliters (7 tablespoons) oat milk, or other milk alternative
- 1 pinch ground vanilla bean
- 1 tablespoon coconut oil, about 20 g; alternatively 30g of butter
- 200 grams (1 ¾ cups) spelt flour type 630
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 pinch salt
For the cocoa dough additionally
- 1 tablespoon baking cocoa
- 1 teaspoon oat milk
For the optional frosting
- 200 grams (1 cup) cream cheese, I used 15% fat
- 2 tablespoons applesauce, or banana puree, amount as needed

Notes
- The cake is more compact and moist than regular cake due to the lack of eggs and extremely low fat, but it is supposed to be.
- You can prepare the cake well and it can also be frozen.
